Three days into January and already struggling to keep up the health kick resolution so many of us make? Me too and I think it’s because I still have a stack of leftover chocolate from Christmas staring at me.
So, instead of cutting out chocolate completely I’m allowing myself to eat chocolate until the Christmas stash is completely gone BUT instead of eating it all the time I’ve found a healthy snack to balance it out- These feel good flapjacks are full of the good stuff. I’m talking apple, apricots, raisins and, oats. The beauty of them is that you can add whatever you want and they make for the perfect late afternoon snack to take you through to dinner time.
You’ll need…(this recipe makes around 12)
50g butter, & some for greasing
2 tbsp peanut butter (I prefer crunchy!)
3 tbsp honey / maple syrup
2 ripe bananas, mashed not stirred
1 apple, peeled & grated
85g dried apricots, chopped
85g mixed seed
…& why not add some extras? Dried cranberries, dates, cherries and coconut are also winners!
Firstly, remember to preheat the oven to 160C / 140C fan / gas 3. (I nearly ALWAYS forget)
Prepare your tin (20cm squared) by greasing with a bit of butter.
Heat the butter, peanut butter and honey in a pan, until completely melted. I would keep stirring slowly to not burn the mixture.
Add the mashed bananas, apple and pour 100ml of hot water into the mix. Stir until combined.
Tip the oats, your choice of dried fruit and the seeds into a large bowl.
Pour in the mixture of banana, apple and stir until everything is coated with a wet mixture.
Lastly, once mixed altogether tip into the greased tin and make sure it sits level.
Bake for 55 mins until golden. You may need to cover the top with tin foil to stop it from burning.
Leave to cool in the tin before cutting it into 12 pieces.
If you like to snack why not cut them into tiny squares? This way you can have more than one without the worry of eating too many, as four basically counts as one! Also, if unlike me you don’t want to cut out chocolate anytime soon, why not drip some melted dark chocolate over the top to give them a sweet kick?
These will be a firm addition to my lunchbox at work, as I try and get fit in 2018.
